French term for the stages of wine maturation after its fermentation. It is the art of achieving the grapes’ maximum potential through barrel aging, fining and filtering. Roughly translates to “raising” in English.
Example: “Barrels allow a very slow exposure to small quantities of oxygen, and this is one of the reasons they are favored tools of élevage.”
