Cuvée

Refers to a blend of several grapes or carefully selected wines, usually of high quality. A derivation of the word “cuve” which is French for a wine tank/vat.

Délestage, also known as “rack and return”, is a process in which wine is entirely pumped out of the fermentation tank and later back over the cap to extract color and flavor.

Élevage

French term for the stages of wine maturation after its fermentation. It is the art of achieving the grapes’ maximum potential through barrel aging, fining and filtering. Roughly translates to “raising” in English.

Fermentation
